Fried Rice!
Ingredients:
3 tablespoons butter, divided
2 large eggs, whisked
2 medium carrots, peeled and diced
1 small white onion, diced
1/2 cup frozen peas
3 cloves garlic, minced
4 cups cooked and chilled rice (preferably day-old)
3 tablespoons soy sauce (or to taste)
1 teaspoon sesame oil
1/2 teaspoon black pepper (or to taste)
1/4 teaspoon salt (adjust to taste)
3 green onions, sliced (for garnish)
Instructions:
1. Scramble the Eggs
Heat 1 tablespoon of butter in a large skillet or wok over medium heat.
Add the whisked eggs and cook, stirring occasionally, until scrambled and fully cooked.
Transfer the eggs to a separate plate and set aside.
2. Sauté the Vegetables
In the same pan, add another tablespoon of butter.
Add the diced carrots and onion. Sauté for 3-4 minutes until slightly softened.
Add the peas and minced garlic, cooking for another 1-2 minutes until fragrant.
3. Fry the Rice
Increase the heat to medium-high.
Add the remaining tablespoon of butter and the chilled rice. Stir well to combine with the vegetables.
Let the rice cook for a few minutes, stirring occasionally, to develop a slightly crispy texture.
4. Season & Combine
Pour in the soy sauce, sesame oil, black pepper, and salt. Stir everything together.
Add the scrambled eggs back to the pan and mix well.
5. Garnish & Serve
Remove from heat and top with sliced green onions.
Serve hot and enjoy
